What's for dinner???
Every once in a while we get in the mood to watch Nacho Libre and our favorite dinner to go with it.... you got it.... Nachooooooooooooooooos!!!

Here it goes:
1 bag of Don Julio Tortilla Chips Restaurant Style
1 1/2 Lbs cooked ground beef (seasoned with garlic salt, black pepper and onion powder) drained.
2 cans of pinto beans, drained
4 oz. shredded medium cheddar cheese
4 oz. queso fresco (mexican style cheese - Ranchero)
Sour cream
Pico de Gallo salsa (recipe on bottom)
On a large cookie sheet cover the bottom with a layer of tortilla chips, add the meat, beans and cheeses. Broil in the oven for about 7 minutes or until the cheeses are melted (watch them closely, they can burn very quickly!) Serve on a plate, add sour cream and salsa.

Pico de gallo
In a large bowl add 1 bunch of cilantro chopped (without the stems), add 1/2 a medium chopped onion, 2 chopped roma tomatoes, the juice of 2 limes, garlic salt, 2 tablespoons of balsamic vinegar. Mix everything with a spoon. Let the ingredients get happy : ) for a few minutes before serving.
OOPS!! I forgot to mention to add 2 finely chopped serrano peppers!!! It's not a salsa without the heat!!!
